- Cook diced apples with ⅓ cup sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, lemon juice, and butter in a skillet over medium heat until thick and syrupy, 6 to 8 minutes. Cool completely.
- Roll out both pie crusts on a floured surface; cut each into 4 rectangles to make 8 total.
- Place 4 rectangles on a parchment-lined baking sheet. Spoon 2 to 3 tablespoons filling onto each, brush edges with egg wash, top with remaining rectangles, and crimp edges with a fork. Cut 3 steam vents in each pie.
- Brush pies with egg wash and bake at 400°F (200°C) for 15 to 18 minutes until deeply golden and flaky.
- Brush hot pies with melted butter and coat immediately in a mix of ¼ cup sugar and ½ tsp cinnamon. Serve warm.
Notes
The pies are best eaten the day they’re made, while the crust is crisp. Leftovers keep in an airtight container at room temperature overnight, but the sugar coating softens. Reheat in a 350°F oven for 5 minutes to revive the shell.
