Crispy Hot Honey Chicken Sandwich Recipe

Ingredients
  

  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 tsp kosher salt
  • 1 tsp black pepper, divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • Vegetable or peanut oil, for frying
  • 4 brioche buns, split and toasted
  • 1/4 cup honey
  • 2 tbsp unsalted butter
  • 1 to 2 tbsp hot sauce
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups finely shredded green cabbage
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sugar

Method
 

  1. Whisk the buttermilk, 2 tbsp hot sauce, salt, 1/2 tsp black pepper, garlic powder, and smoked paprika. Add chicken, coat, cover, and refrigerate at least 1 hour.
  2. Stir together flour, cornstarch, 1 tsp salt, and remaining 1/2 tsp black pepper. Dredge chicken, pressing to adhere. Set aside.
  3. Heat oil to 350°F. Fry chicken in batches, about 5 minutes per side, until deep golden and 165°F internal. Drain on a wire rack.
  4. While the chicken fries, warm honey, butter, 1 to 2 tbsp hot sauce, and red pepper flakes in a small saucepan over low heat until butter melts and sauce is smooth.
  5. Toss hot fried chicken in the sauce. Toss cabbage with vinegar, sugar, and a pinch of salt. Pile chicken and slaw onto toasted buns and serve right away.

Notes

Brining overnight gives the most flavor. The slaw is best made just before serving; if you prep it ahead, keep it cold and give it a fresh toss. For even crunchier crust, double-dredge the chicken as described in Step 2.
