- Spread the mayonnaise on one side of each bread slice. Pile the cheddar and mozzarella on the dry side of one slice, then close with the other slice, mayo side out.
- Preheat a nonstick skillet over medium-low heat. Place the sandwich in the dry pan, cover, and cook 2 to 3 minutes to melt cheese. Uncover and continue cooking until the bottom is deep golden and crisp, about 3 to 4 minutes total from the start.
- Flip and cook the second side until golden, another 3 to 4 minutes. Transfer to a board, sprinkle with salt if using, and slice in half. Serve immediately.
Notes
For an even quicker melt, you can grate the cheese while the pan heats. If you prefer butter, spread 2 teaspoons softened butter on each bread slice instead of the mayo. The sandwich will still be crisp and golden.
