Method
- Stir together cream cheese, crab, green onions, garlic powder, tamari, and white pepper until evenly combined.
- Spoon about 1 tbsp filling onto each wrapper, seal edges with water, and press out any air pockets.
- Heat 2 inches of oil in a heavy pot to 350°F (175°C).
- Fry rangoons in batches for 2 to 3 minutes, turning once, until golden and blistered.
- Drain on paper towels briefly, then serve hot with dipping sauce.
Notes
Serve the rangoons right away while the shells are at their crunchiest. If you want to work ahead, fill and fold them earlier in the day and keep them covered in the fridge, then fry just before serving. Gluten-free wrappers vary by brand; if yours crack when folding, let them warm up on the counter for 10 minutes before using.
