Crispy-Edged Roasted Cabbage Steaks Recipe

Ingredients
  

  • 1 large green cabbage (about 2½ to 3 lbs)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • Pinch of crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Remove outer leaves, trim stem end, and slice cabbage into 1-inch thick rounds. Arrange on a parchment-lined baking sheet without crowding, brush both sides with olive oil, then season the tops with garlic powder, salt, and pepper.
  2. Roast for 20 to 22 minutes, until tops are browning and edges are golden.
  3. Flip steaks carefully, sprinkle with Parmesan, then broil on high for 2 to 3 minutes until the cheese is bubbly and browned in spots.
  4. Transfer to a platter, spoon any stray crispy cheese bits over the top, and finish with parsley and a pinch of red pepper flakes. Serve immediately.

Notes

The broiler moves fast, so once that cheese starts spotting brown, pull the pan. If you want to prep ahead, you can slice the cabbage and store the rounds wrapped in damp paper towels in the fridge for up to a day before roasting.
