- Press and cube the tofu into 3/4-inch pieces. Toss with cornstarch and fry in hot oil for 6 to 8 minutes until golden on all sides. Set aside.
- Whisk coconut milk, lime juice, soy sauce, and brown sugar until smooth.
- In the same pan, sauté garlic, ginger, and pepper flakes for 30 seconds. Pour in the sauce and simmer 2 to 3 minutes.
- Return tofu to the pan and fold into the sauce. Cook 1 minute to coat and warm through.
- Spoon the tofu and sauce over rice, garnish with cilantro and lime wedges, and serve hot.
Notes
If you can, use a heavy skillet that holds heat well. The sauce thickens as it sits, so serve right after cooking. For a gluten-free version, confirm your soy sauce is tamari or a certified GF brand.
