Crispy Coconut Lime Tofu Recipe

Ingredients
  

  • 14 oz extra-firm tofu
  • 2 tbsp cornstarch
  • 3 tbsp neutral oil
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp fresh lime juice
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 cloves garlic
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes (optional)
  • Steamed jasmine rice, for serving
  • Cilantro and lime wedges, for finishing

Method
 

  1. Press and cube the tofu into 3/4-inch pieces. Toss with cornstarch and fry in hot oil for 6 to 8 minutes until golden on all sides. Set aside.
  2. Whisk coconut milk, lime juice, soy sauce, and brown sugar until smooth.
  3. In the same pan, sauté garlic, ginger, and pepper flakes for 30 seconds. Pour in the sauce and simmer 2 to 3 minutes.
  4. Return tofu to the pan and fold into the sauce. Cook 1 minute to coat and warm through.
  5. Spoon the tofu and sauce over rice, garnish with cilantro and lime wedges, and serve hot.

Notes

If you can, use a heavy skillet that holds heat well. The sauce thickens as it sits, so serve right after cooking. For a gluten-free version, confirm your soy sauce is tamari or a certified GF brand.
