Method
- Whisk the melted butter, granulated sugar, and brown sugar in a large bowl until glossy, about 1 minute.
- Beat in the eggs and vanilla until smooth and slightly thickened, about 30 seconds.
- In a separate bowl, whisk the flour, baking soda, and salt, then stir into the butter mixture just until no dry pockets remain.
- Fold in the chocolate chips, cover, and refrigerate at least 30 minutes (or up to 24 hours).
- Preheat the oven to 350°F. Scoop 2-tablespoon balls onto parchment-lined sheets, 2 inches apart. Bake 10-12 minutes until edges are deeply golden and centers look set. Cool on the sheet 5 minutes, then transfer to a wire rack.
Notes
The dough needs at least 30 minutes of chilling time (not counted in prep). If baking in batches, keep the remaining dough in the fridge. For a thinner cookie, flatten the dough balls slightly before baking.
