- Pat shrimp dry. In a food processor, combine shrimp, egg white, cornstarch, ginger, white pepper, and salt. Pulse to a coarse paste, about 30 seconds; do not overblend.
- Cut bread into triangles. Spread shrimp paste evenly over one side of each triangle to the edges. Top with sesame seeds and press lightly.
- Heat 1 inch oil in a deep skillet to 350°F (175°C). Fry toasts shrimp side down first for 2 minutes, flip and cook 1 minute more until golden and cooked through. Work in batches.
- Drain on a wire rack, sprinkle with salt, and serve hot with scallions.
Notes
Work quickly once the oil is hot; the first batch will be the crispiest. If you need to keep batches warm, place them on a rack in a 200°F (95°C) oven, but they’re best eaten right away.
