Ingredients
Method
- Pound chicken breasts to ½ inch thickness. Whisk buttermilk and eggs, season lightly, and soak chicken for at least 15 minutes.
- Stir together flour, salt, pepper, garlic powder, and paprika. Dredge chicken pieces, pressing firmly so flour adheres, and let rest on a rack for 5 minutes.
- Heat 1 inch oil in a cast-iron skillet to 350°F. Fry chicken in batches, 4 to 5 minutes per side, until golden and 165°F internal. Drain on a wire rack.
- Drain all but 2 tbsp oil from skillet. Melt butter over medium heat, whisk in 3 tbsp flour, and cook 1 minute. Slowly whisk in warm milk and simmer 3 to 5 minutes until thickened. Season with salt and plenty of black pepper.
- Plate chicken and ladle gravy generously over the top. Serve immediately.
Notes
If you have time, marinate the chicken in the buttermilk mixture overnight for even more tenderness and flavor. Let the gravy sit for a minute after cooking; it will thicken slightly off the heat.
