Crispy Chicken Caesar Salad Wrap Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 lb total)
  • Salt and black pepper
  • 2 tbsp olive oil
  • 1/4 cup mayonnaise
  • 2 tsp anchovy paste (or 4 anchovy fillets, mashed)
  • 1 small garlic clove, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/4 cup finely grated Parmesan, plus more for shaving
  • 2 tbsp extra-virgin olive oil
  • 4 cups chopped romaine lettuce
  • 1 cup croutons
  • 4 large flour tortillas (10-inch)

Method
 

  1. Season the chicken with salt and pepper, then sear in a hot skillet with 2 tbsp olive oil until golden and cooked through (165°F), about 5-6 minutes per side. Let rest, then slice.
  2. Whisk together mayonnaise, anchovy paste, garlic, lemon juice, Dijon, and finely grated Parmesan. Slowly whisk in extra-virgin olive oil, then season to taste.
  3. Toss the romaine with half the dressing, fold in the croutons and sliced chicken, and add more dressing only if needed.
  4. Warm the tortillas in a dry skillet, then fill each with the salad mixture and a few Parmesan shavings. Fold in the sides and roll tightly.
  5. Slice each wrap on the diagonal and serve immediately, or wrap whole in foil for a packed lunch.

Notes

For make-ahead lunches, store the chicken, salad, and dressing separately and assemble only when you’re ready to eat. If you like a crispy exterior, toast the assembled wrap in a dry skillet for a minute on each side before slicing.
