Method
- Season the chicken with salt and pepper, then sear in a hot skillet with 2 tbsp olive oil until golden and cooked through (165°F), about 5-6 minutes per side. Let rest, then slice.
- Whisk together mayonnaise, anchovy paste, garlic, lemon juice, Dijon, and finely grated Parmesan. Slowly whisk in extra-virgin olive oil, then season to taste.
- Toss the romaine with half the dressing, fold in the croutons and sliced chicken, and add more dressing only if needed.
- Warm the tortillas in a dry skillet, then fill each with the salad mixture and a few Parmesan shavings. Fold in the sides and roll tightly.
- Slice each wrap on the diagonal and serve immediately, or wrap whole in foil for a packed lunch.
Notes
For make-ahead lunches, store the chicken, salad, and dressing separately and assemble only when you’re ready to eat. If you like a crispy exterior, toast the assembled wrap in a dry skillet for a minute on each side before slicing.
