- Whisk buttermilk, hot sauce, and salt. Add chicken, turn to coat, and marinate 10 minutes at room temperature.
- Combine flour, cornstarch, garlic powder, smoked paprika, and black pepper in a shallow dish.
- Remove chicken from buttermilk, dredge in flour mixture pressing firmly. Dip back into buttermilk, then dredge again, pressing to create craggy bits.
- Heat 1 inch oil in a skillet to 350°F. Fry chicken 3–4 minutes per side until golden and 165°F internal. Drain on a wire rack.
- Mix slaw ingredients and spicy mayo ingredients separately. Toast buns, spread mayo, top with slaw and chicken, and serve immediately.
Notes
The buttermilk marinade can sit in the fridge for up to 4 hours for deeper flavor. Fry just before serving for the crunchiest crust. If you need to keep cooked chicken warm, place it on a rack in a 200°F oven.
