Crispy, Chewy Rice Krispie Chocolate Chip Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1½ cups Rice Krispies cereal
  • 1½ cups semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Cream the softened butter, brown sugar, and granulated sugar on medium speed until fluffy and lighter in color, about 3 minutes.
  2. Beat in the eggs one at a time, then mix in the vanilla until just combined.
  3. Whisk the flour, baking soda, and salt in a separate bowl. Add the dry ingredients to the butter mixture in two additions, mixing on low just until combined.
  4. Gently fold in the Rice Krispies and chocolate chips with a spatula, taking care not to crush the cereal.
  5. Scoop tablespoon-sized mounds of dough onto parchment-lined baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes, until edges are golden and centers look just set. Cool on the sheet for 2 minutes, then transfer to a wire rack.

Notes

For an extra chewy center, pull the cookies from the oven when the edges are set but the middle still looks slightly underbaked. The residual heat will finish them on the sheet.
