- Preheat the oven to 400°F (200°C). Season the chicken thighs with the salt and pepper, then sear skin side down in oil in a cast iron skillet over medium-high heat for 8-10 minutes until deep brown.
- Flip the chicken, add the garlic and rosemary, and let the bottom sear for 2 minutes.
- Transfer the skillet to the oven and roast for 15-18 minutes, until the internal temperature reaches 165°F (74°C).
- Rest the chicken in the pan 5 minutes, then transfer to a platter and spoon the pan juices over the top.
Notes
If your thighs are extra large or very cold, the oven time may stretch a couple of minutes; trust the thermometer over the clock. The rested pan juices are already a light sauce, but you can pour a splash of white wine into the hot skillet after removing the chicken, scrape up the browned bits, and simmer for a minute for something richer.
