- Toss the diced potatoes, onion, bell pepper, oil, salt, pepper, and paprika together in a large bowl until evenly coated.
- Place a large cast iron skillet over medium heat, add the mixture in a single layer, and cook undisturbed for 8-10 minutes until the bottoms are deeply golden.
- Flip the potatoes in large sections and cook 8-10 minutes more, stirring only once or twice, until tender and crispy.
- Taste and adjust salt if needed, then serve hot.
Notes
If you want even more browning, give the potatoes an extra minute or two after the second flip without stirring. A nonstick skillet works, but the crust won’t be quite as deep.
