- Slice sweet potatoes 1/16 inch thick, soak in cold water 10 minutes, drain, and pat completely dry.
- Toss slices with olive oil and salt until evenly coated.
- Arrange in a single layer on two parchment-lined baking sheets, no overlapping.
- Bake at 400°F for 15 to 20 minutes, rotating pans and flipping slices halfway, until edges are browned and centers are crisp.
- Transfer to a wire rack, cool 5 minutes, sprinkle with extra salt, and serve.
Notes
If your oven runs hot, check the chips at 12 minutes. A few darker edges taste great, but all-black chips turn bitter, so pull any that are browning fast. The soak time is built into the prep minutes, so you can get the oven heating while the slices sit in the water.
