Method
- Preheat the oven to 425°F (200°C). Pat the chicken wings completely dry and toss with the baking powder, salt, pepper, garlic powder, and paprika.
- Lightly oil a wire rack set over a rimmed baking sheet. Arrange the wings on the rack with space between each piece.
- Bake for 25 minutes, flip the wings, then bake another 20 to 25 minutes until deep golden and an instant-read thermometer reads 165°F.
- Remove the wings from the rack and toss immediately in warm sauce, or serve plain while still hot and crisp.
Notes
If the wings are especially large or are baked whole, add 5 to 10 minutes to the bake time. Do not let them cool on the rack or they will lose some crunch.
