Crispy Baked Chicken Tenders Recipe

Ingredients
  

  • 2 lbs chicken tenders (about 12 pieces)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Cooking spray or olive oil mister

Method
 

  1. Preheat oven to 400°F (200°C). Set up three shallow dishes: flour seasoned with half the salt, pepper, garlic powder, and paprika; beaten eggs; and panko mixed with the remaining seasonings.
  2. Pat the chicken tenders dry, then dredge each one lightly in the seasoned flour and shake off the excess.
  3. Dip each flour-coated tender in the egg, letting extra drip away.
  4. Press the tender into the panko, coating all sides firmly, then place on a wire rack set on a baking sheet.
  5. Arrange the tenders in a single layer, mist with cooking spray, and bake for 15 to 20 minutes, flipping and misting the second side after 10 minutes, until golden and cooked to 165°F (74°C). Serve hot.

Notes

Let the breaded tenders rest for 5 minutes before baking to help the coating stay put. For the crispiest bottom, use a wire rack over a parchment-lined sheet. Leftovers reheat beautifully in a 350°F oven for 5 minutes or in an air fryer.
