- Preheat oven to 400°F (200°C). Set up three shallow dishes: flour seasoned with half the salt, pepper, garlic powder, and paprika; beaten eggs; and panko mixed with the remaining seasonings.
- Pat the chicken tenders dry, then dredge each one lightly in the seasoned flour and shake off the excess.
- Dip each flour-coated tender in the egg, letting extra drip away.
- Press the tender into the panko, coating all sides firmly, then place on a wire rack set on a baking sheet.
- Arrange the tenders in a single layer, mist with cooking spray, and bake for 15 to 20 minutes, flipping and misting the second side after 10 minutes, until golden and cooked to 165°F (74°C). Serve hot.
Notes
Let the breaded tenders rest for 5 minutes before baking to help the coating stay put. For the crispiest bottom, use a wire rack over a parchment-lined sheet. Leftovers reheat beautifully in a 350°F oven for 5 minutes or in an air fryer.
