Crispy Baked Chicken Leg Quarters Recipe

Ingredients
  

  • 4 chicken leg quarters (about 3 lbs)
  • 2 tbsp olive oil
  • 1 ½ tsp kosher salt
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp onion powder (optional)

Method
 

  1. Preheat the oven to 400°F (200°C). Pat the chicken leg quarters dry with paper towels. Mix the salt, paprika, garlic powder, pepper, and onion powder in a small bowl.
  2. Rub the olive oil all over the chicken, then coat evenly with the spice mixture. Work some of the rub under the skin.
  3. Place the chicken skin side up on a rimmed baking sheet. Roast for 40 to 45 minutes, until the skin is deep golden and the thickest part of a thigh reaches at least 165°F (74°C).
  4. Let the chicken rest on the pan for 5 minutes, then transfer to a platter, spoon the pan drippings over top, and serve.

Notes

For even crispier skin, use a wire rack set over the baking sheet. If the pan looks like it’s holding a lot of fat after 20 minutes, you can drain some off. Leftover chicken is great shredded into salads, tacos, or grain bowls.
