- Preheat the oven to 400°F (200°C). Pat the chicken leg quarters dry with paper towels. Mix the salt, paprika, garlic powder, pepper, and onion powder in a small bowl.
- Rub the olive oil all over the chicken, then coat evenly with the spice mixture. Work some of the rub under the skin.
- Place the chicken skin side up on a rimmed baking sheet. Roast for 40 to 45 minutes, until the skin is deep golden and the thickest part of a thigh reaches at least 165°F (74°C).
- Let the chicken rest on the pan for 5 minutes, then transfer to a platter, spoon the pan drippings over top, and serve.
Notes
For even crispier skin, use a wire rack set over the baking sheet. If the pan looks like it’s holding a lot of fat after 20 minutes, you can drain some off. Leftover chicken is great shredded into salads, tacos, or grain bowls.
