- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Beat eggs in a shallow bowl. Mix panko, Parmesan, garlic powder, paprika, ¼ tsp salt, and pepper in another bowl. Slice chicken into ¾-inch strips and season with remaining ¼ tsp salt.
- Dip each strip in egg, then coat thoroughly in panko mixture, pressing to adhere.
- Arrange in a single layer on the sheet, spray or brush with oil, and bake 12 minutes.
- Flip strips, then bake 8 to 10 minutes more until deeply golden and chicken registers 165°F (74°C).
- Serve immediately with your favorite dip.
Notes
For crunch that lasts, let the strips sit on a wire rack for a minute after baking instead of stacking them on a plate. If you want an even thicker crust, double-dip by repeating the egg and panko step before baking.
