- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Toss the halved sprouts with olive oil, garlic powder, salt, and pepper until well coated.
- Spread the sprouts in a single layer, cut side down, with space between them.
- Roast for 20 to 25 minutes, shaking the pan at 15 minutes, until the cut sides are deep golden and edges are crisp.
- Remove from oven, toss with Parmesan if using, and finish with a squeeze of lemon. Serve hot.
Notes
If your Brussels sprouts are on the large side, quarter them so they roast through without burning. For the crispiest result, make sure the sprouts are completely dry before oiling them, and don’t skip the parchment. The cheese is optional but adds a salty boost that pairs beautifully with the charred leaves.
