Crispy Apple Cinnamon Granola Recipe

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup raw pecans or walnuts, roughly chopped
  • 1/4 cup raw pumpkin seeds (optional)
  • 2 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 1/2 cup melted coconut oil (or neutral vegetable oil)
  • 1/2 cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 cup dried apple rings, chopped into small bits

Method
 

  1. Heat the oven to 300°F (150°C). Line a large baking sheet with parchment paper. In a large bowl, toss the oats, pecans, pumpkin seeds (if using), cinnamon, and salt until mixed.
  2. In a small bowl, whisk the melted coconut oil, maple syrup, and vanilla until smooth. Pour over the dry ingredients and stir until everything is evenly coated.
  3. Spread the mixture onto the prepared baking sheet in a flat layer. Press down firmly with a spatula. Bake for 25 to 30 minutes, stirring once at the 15-minute mark and pressing down again gently. Bake until deep golden.
  4. Remove the sheet from the oven and immediately scatter the chopped dried apples over the hot granola. Do not stir. Let it cool completely on the sheet, about 30 minutes, then break into clusters.

Notes

Let the granola cool fully before you store it; any trapped warmth will soften the crunch. If you prefer looser granola, skip the pressing steps and stir gently after baking instead.
