- Slice the chicken breasts in half lengthwise to make 4 cutlets, pound to ¼ inch thick, and season lightly with salt and pepper.
- Beat the egg with 1 tbsp water in a shallow bowl. In a separate dish, mix the panko, Parmesan, garlic powder, smoked paprika, ½ tsp salt, and ¼ tsp pepper.
- Dip each cutlet in egg, then press firmly into the panko mixture to coat both sides, and let rest on a plate for 5 minutes.
- Preheat the air fryer to 400°F (200°C), spray the basket, arrange cutlets in a single layer, spray tops lightly with oil, and air fry for 10 minutes, flipping and spraying again at the 5-minute mark.
- Transfer to a platter, squeeze lemon over the top, and serve immediately.
Notes
For the crispest crust, use panko and avoid crowding the air fryer basket. If your cutlets are on the thicker side, add a minute or two until the internal temperature hits 165°F. Leftovers reheat best in the air fryer rather than the microwave.
