- Butter a 9×13-inch baking dish and shingle the bread slices snugly inside.
- Whisk together the eggs, heavy cream, whole milk, 1/2 cup sugar, vanilla, and salt until smooth and the sugar dissolves.
- Pour the custard over the bread, press down gently, cover, and refrigerate at least 4 hours, ideally overnight. Let sit at room temperature while the oven preheats to 350°F (175°C). Bake uncovered for 40 to 45 minutes, until puffed and set in the center.
- Sprinkle the remaining 1/3 cup sugar evenly over the top. Broil 4 to 5 inches from the heat for 1 to 3 minutes, watching carefully, until the sugar melts into an amber caramel crust. Cool 5 minutes before serving.
Notes
The dish needs an overnight soak or at least 4 hours in the fridge, so plan ahead. If the top browns too fast while baking, tent it loosely with foil.
