Crème Brûlée French Toast Casserole Recipe

Ingredients
  

  • 1 lb loaf brioche or challah, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 tbsp vanilla extract
  • ¼ tsp fine sea salt
  • ¼ cup granulated sugar (for topping)
  • Butter for greasing

Method
 

  1. Whisk eggs, milk, cream, ¾ cup sugar, vanilla, and salt in a large bowl until smooth, about 2 minutes.
  2. Butter a 9x13-inch dish, spread bread cubes evenly, pour custard over top, and press down gently. Cover and refrigerate at least 4 hours or overnight.
  3. Preheat oven to 350°F. Uncover dish and let it sit at room temperature 15 minutes, then bake 45 to 50 minutes until puffed and golden with a set center. Cool 10 minutes.
  4. Sprinkle ¼ cup sugar evenly over the top and broil 4 inches from the heat for 2 to 3 minutes, until sugar melts and turns amber. Watch closely.
  5. Let rest 5 minutes, then slice into squares and serve warm.

Notes

Soaking time of at least 4 hours (overnight is best) is not included in the prep time. For the finest custard texture, use slightly stale bread and let the casserole soak overnight. The sugar crust will be its crackliest right after broiling.
