Creamy White Sauce Pasta Recipe

Ingredients
  

  • 8 oz (225g) short pasta
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp ground nutmeg
  • Chopped fresh parsley, for garnish (optional)

Method
 

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.
  2. Melt the butter in a large skillet over medium heat. Add the garlic and cook 1 minute until fragrant.
  3. Whisk in the flour and cook 1 minute. Slowly pour in the milk while whisking, then cook 3-5 minutes until thickened.
  4. Reduce heat to low, stir in Parmesan, salt, pepper, and nutmeg until melted, about 1 minute.
  5. Add the drained pasta to the sauce and toss well, adding pasta water as needed to loosen. Serve immediately with extra Parmesan and parsley.

Notes

Grate the Parmesan yourself; pre-shredded cheese often contains anti-caking agents that can make the sauce grainy.
