- Cook spaghetti in salted boiling water until just al dente, about 1 minute less than package directions. Reserve 1 cup pasta water, then drain.
- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat and sear chicken 5 to 6 minutes per side until golden and 165°F internal. Transfer to a cutting board.
- In the same skillet, melt butter over medium heat. Add garlic and cook 30 seconds. Whisk in flour, cook 1 minute. Slowly whisk in broth and cream, then simmer 2 to 3 minutes until thickened. Off heat, stir in Parmesan.
- Slice chicken against the grain. Add spaghetti and chicken to the skillet and toss with sauce, using reserved pasta water to loosen if needed. Serve hot with extra Parmesan and red pepper flakes.
Notes
The sauce will thicken as it sits, so serve it right away for the creamiest texture. If you need a couple of extra minutes, keep the skillet over very low heat and stir in a splash of pasta water to hold the consistency.
