Creamy Weight Watchers Potato Soup Recipe

Ingredients
  

  • 3 medium russet potatoes, peeled and diced
  • 1 small head cauliflower, cut into florets
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup plain nonfat Greek yogurt
  • 1/4 cup shredded reduced-fat sharp cheddar cheese
  • Salt and black pepper
  • Fresh chives, for garnish

Method
 

  1. In a large pot over medium heat, cook the onion with cooking spray or 1 tablespoon water until soft, about 5 minutes. Add garlic and cook 1 minute.
  2. Add potatoes, cauliflower, broth, 1 teaspoon salt, and pepper. Boil, then simmer covered for 15-20 minutes until tender.
  3. Remove from heat. Blend until smooth with an immersion blender, temper the yogurt with hot soup, then stir it in.
  4. Ladle into bowls and top with cheddar, pepper, and chives. Serve hot.

Notes

For a chunkier soup, set aside a cup of the cooked potato and cauliflower pieces before blending, then stir them back in after pureeing. Points values were calculated using low-sodium chicken broth, nonfat Greek yogurt, and reduced-fat cheddar. If you use full-fat dairy or butter, adjust accordingly.
