Creamy Vegetarian White Chili Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 (4 oz) can diced green chiles
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 1 cup frozen corn
  • 3 cups vegetable broth
  • 4 oz cream cheese, cut into cubes
  • Salt and black pepper
  • Lime wedges, fresh cilantro, and sliced avocado for serving

Method
 

  1. Heat the olive oil in a large pot over medium. Sauté onion and bell pepper with a pinch of salt until soft, about 6 minutes. Add garlic and cook 1 minute.
  2. Stir in cumin, oregano, and pepper. Cook 1 minute, stirring constantly.
  3. Add broth, green chiles with their liquid, beans, and corn. Bring to a boil, then simmer uncovered 15 minutes.
  4. Reduce heat to low, add cream cheese, and stir until melted and smooth, about 2 minutes. Taste and adjust salt.
  5. Ladle into bowls and top with cilantro, lime wedges, and avocado.

Notes

The broth will thicken as it cools. When reheating leftovers, add a small splash of vegetable broth or water and warm gently over low heat to keep the cream from breaking. If you prefer a thicker chili, mash a few beans against the side of the pot during the last few minutes of simmering.
