- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear thighs skin side down 5-6 minutes until golden, flip and cook 5-6 minutes more until 165°F. Transfer to a plate.
- Lower heat to medium, add garlic and sun-dried tomatoes and cook 1 minute until fragrant.
- Pour in cream and broth, scraping up brown bits. Bring to a simmer, stir in parmesan, and cook on low 3-4 minutes until slightly thickened.
- Add spinach in handfuls, stirring until wilted, about 2 minutes. Return chicken to the pan, spoon sauce over, and warm 1 minute. Garnish with basil and serve.
Notes
For a lighter version, use half-and-half and keep the simmer low so the sauce does not curdle. The sauce will thicken a bit more off the heat, so pull it when it looks slightly loose.
