Creamy Tuna Pasta Recipe

Ingredients
  

  • 8 oz dried short pasta
  • 2 tbsp butter
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 2 (5 oz) cans oil‑packed tuna, drained
  • ½ cup grated Parmesan
  • 1 lemon, zested and juiced
  • ¼ cup chopped fresh parsley
  • Salt and black pepper

Method
 

  1. Cook the pasta in salted boiling water until al dente. Reserve some pasta water, then drain.
  2. Melt butter in a large skillet over medium heat and cook the onion about 4 minutes until soft. Add garlic and cook 30 seconds.
  3. Stir in the cream, bring to a gentle simmer, then flake in the tuna, Parmesan, and lemon zest. Warm through 2 minutes.
  4. Toss the drained pasta with the sauce, adding pasta water as needed. Finish with lemon juice, parsley, and black pepper, then serve hot.

Notes

Reserve more pasta water than you think you’ll need, a half‑cup is safe. The sauce thickens as it sits, so when reheating, add a splash of milk or water to bring it back.
