- Bring a large pot of salted water to a boil. Cook tortellini according to package until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
- Melt butter in a large skillet over medium heat. Add garlic and cook, stirring, until fragrant, about 1 minute.
- Pour in the cream and bring to a gentle simmer. Stir in Parmesan, salt, pepper, and nutmeg. Cook, stirring often, until slightly thickened, 2 to 3 minutes.
- Add the tortellini and spinach to the skillet. Toss until the spinach wilts and the pasta is coated, 1 to 2 minutes. Adjust with reserved pasta water if needed and serve right away with extra Parmesan.
Notes
Fresh tortellini cooks faster than dried; if using frozen, add a minute or two to the boiling time. The sauce is creamiest served right away, but leftovers reheat well with a splash of milk over low heat.
