- Cook the pasta in boiling salted water until al dente, about 7-8 minutes. Reserve ½ cup pasta water, then drain.
- Melt the butter in a large skillet over medium heat. Whisk in the flour and cook for 1 minute until bubbly and nutty.
- Slowly whisk in the warm milk, then simmer for 3-5 minutes until the sauce thickly coats a spoon. Remove from heat and stir in the cheeses, mustard powder, and black pepper until smooth. Season with salt.
- Add the drained pasta to the sauce and toss to coat. Thin with reserved pasta water if needed. Serve immediately.
Notes
Reserved pasta water is your best friend if the sauce thickens too much after tossing. For the creamiest texture, grate the cheese yourself and serve the mac and cheese as soon as it’s done.
