Creamy Taco Soup Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 4 cups chicken broth
  • 4 oz cream cheese, softened
  • Salt and black pepper, to taste

Method
 

  1. In a large pot over medium-high heat, brown the ground beef and onion until beef is no longer pink, about 5-6 minutes. Drain excess fat, leaving a tablespoon in the pot.
  2. Stir in taco seasoning and garlic, cook 30 seconds. Add beans, corn, and tomatoes with juice. Stir to combine.
  3. Pour in chicken broth, bring to a boil, then reduce heat and simmer uncovered for 15 minutes. Season with salt and pepper.
  4. Remove from heat, add cream cheese cubes, let sit 2 minutes, then stir until melted and smooth. Serve with desired toppings.

Notes

The soup will thicken overnight, so warm it with a splash of broth. Top with crushed tortilla chips, shredded cheese, avocado, sour cream, or a squeeze of lime.
