Ingredients
  

  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 2 tbsp butter, divided
  • 8 oz Swiss cheese, shredded from a block
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 box (6 oz) stuffing mix, crushed
  • 2 tbsp melted butter

Method
 

  1. Preheat oven to 375°F. Season chicken with half the salt and the pepper, then sear in 1 tbsp butter over medium-high heat until golden on both sides.
  2. Whisk together soup, sour cream, milk, garlic powder, onion powder, remaining salt, and half the Swiss cheese until smooth.
  3. Grease a 9x13 dish, spread a thin layer of sauce, place chicken in a single layer, and pour remaining sauce over the top.
  4. Cover with foil and bake 25 minutes. Toss stuffing mix with remaining Swiss and melted butter. Uncover, add topping, and bake uncovered 10 to 15 minutes until bubbly and golden.
  5. Let rest 5 minutes, then serve, spooning sauce and topping over each portion.

Notes

If you use a store-bought rotisserie chicken, shred it and skip the searing; reduce the covered bake time to 15 minutes. Allowing the casserole to rest a few minutes after baking helps the sauce thicken so it stays on the chicken instead of pooling on the plate.
