Creamy Stovetop Steel Cut Oatmeal Recipe

Ingredients
  

  • 1 cup steel cut oats
  • 3 cups water
  • ¼ tsp salt
  • ½ cup milk (any kind), plus more for serving
  • 1 tbsp butter (optional)
  • Sweetener (maple syrup, brown sugar, or honey), to taste
  • Toppings: fresh fruit, nuts, seeds, cinnamon

Method
 

  1. Heat a medium saucepan over medium heat. Add the oats and toast, stirring, for 2 minutes until fragrant and slightly darker.
  2. Add water and salt, bring to a boil over high heat, then reduce heat to low. Cover with the lid ajar and simmer 20–25 minutes, stirring every 5 minutes, until oats are tender and creamy.
  3. Remove from heat, stir in milk and butter. Ladle into bowls, add sweetener and toppings, and serve hot.

Notes

If you prefer a looser oatmeal, stir in a bit more milk or water right before serving. Leftovers thicken in the fridge, so add a splash of liquid when reheating.
