Creamy Stovetop Chicken and Noodles Recipe

Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken thighs, trimmed and cut into bite-sized pieces
  • Salt and black pepper
  • 2 tbsp vegetable oil
  • 3 tbsp unsalted butter, divided
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery ribs, diced
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk, plus more as needed
  • 1 tsp dried thyme
  • 8 oz wide egg noodles
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat the oil in a large deep skillet over medium-high heat. Season the chicken with 1 tsp salt and 1/2 tsp pepper. Brown the chicken in a single layer, turning once, about 5 minutes total. Transfer to a plate.
  2. Reduce heat to medium. Add 1 tbsp butter, then the onion, carrot, and celery. Cook, stirring and scraping up browned bits, until softened, about 5 minutes. Stir in the garlic and cook 30 seconds.
  3. Sprinkle the flour over the vegetables and stir for 1 minute. Gradually pour in the broth and milk while stirring, then add the thyme. Bring to a gentle simmer.
  4. Return the chicken and any juices to the skillet. Add the egg noodles, stir, cover, and simmer, stirring once halfway, until the noodles are tender, about 8 minutes. Add a splash of broth if the sauce gets too thick before the noodles are done.
  5. Remove from heat. Stir in the remaining 2 tbsp butter and a little extra milk if you like. Top with parsley and serve immediately.

Notes

The egg noodles will keep absorbing liquid as the dish sits. If it thickens more than you like, stir in a splash of warm broth or milk just before serving.
