- Pat the steak dry and season with salt and pepper. Sear in a hot oiled skillet over high heat for about 3 minutes per side, then set aside to rest.
- Boil the pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
- Reduce skillet heat to medium, melt butter, and sauté garlic for 30 seconds. Pour in cream and scrape up the browned bits. Simmer for 2 minutes, then stir in parmesan until melted.
- Add drained pasta and a splash of pasta water to the skillet. Toss to coat, adding more water until the sauce is glossy. Fold in spinach if using.
- Slice rested steak against the grain and arrange over the pasta. Top with extra parmesan and any juices from the cutting board.
Notes
Letting the steak rest is the most important step for juicy meat. For the most tender slices, cut against the grain. If you want to prep ahead, cook the pasta and sauce up to a day in advance, then reheat gently while you sear the steak fresh.
