Creamy Spinach Pasta Recipe

Ingredients
  

  • 8 oz short pasta (penne, fusilli, or farfalle)
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 5 oz fresh baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • Salt and black pepper
  • Pinch of nutmeg (optional)

Method
 

  1. Boil pasta in salted water until al dente, reserving 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil over medium heat and sauté garlic for 1 minute until fragrant and pale gold.
  3. Pour in cream and add spinach in handfuls. Simmer for about 3 minutes until spinach is wilted and sauce thickens slightly. Stir in Parmesan, nutmeg, salt, and pepper. If too thick, add a splash of pasta water.
  4. Drain pasta and add to the sauce. Toss well, adding pasta water as needed until glossy and creamy. Serve hot with extra Parmesan and black pepper.

Notes

If the sauce separates, a few tablespoons of warm pasta water will bring it back together. This dish is best eaten right away, but leftovers reheat beautifully with a little milk.
