- Boil lasagna noodles in salted water until just tender, 8 to 10 minutes. Drain, rinse with cool water, and lay flat on a kitchen towel.
- Mix the ricotta, spinach, 1 cup mozzarella, Parmesan, egg, garlic, salt, and pepper in a bowl until combined.
- Spread 3/4 cup marinara in a 9x13 dish. Spread a generous 1/4 cup filling on each noodle, roll up, and place seam side down in the dish.
- Preheat oven to 375°F. Pour remaining marinara over rolls and top with remaining 1 cup mozzarella. Bake 25 to 30 minutes until bubbly and golden. Rest 5 minutes.
- Lift rolls onto plates, spoon over extra sauce, and tear fresh basil on top.
Notes
Let the baked dish rest for a full 5 minutes, the rolls cut and lift cleanly after that short pause. If your marinara is chunky, the sauce clings to the rolls even better.
