Creamy Spinach Lasagna Roll Ups Recipe

Ingredients
  

  • 12 lasagna noodles, plus a few extra
  • 10 oz frozen spinach, thawed and squeezed very dry
  • 15 oz whole milk ricotta
  • 2 cups shredded low moisture mozzarella, divided
  • 1/2 cup grated Parmesan
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt, plus more for pasta water
  • Freshly ground black pepper
  • 3 cups marinara sauce
  • Fresh basil leaves, for serving

Method
 

  1. Boil lasagna noodles in salted water until just tender, 8 to 10 minutes. Drain, rinse with cool water, and lay flat on a kitchen towel.
  2. Mix the ricotta, spinach, 1 cup mozzarella, Parmesan, egg, garlic, salt, and pepper in a bowl until combined.
  3. Spread 3/4 cup marinara in a 9x13 dish. Spread a generous 1/4 cup filling on each noodle, roll up, and place seam side down in the dish.
  4. Preheat oven to 375°F. Pour remaining marinara over rolls and top with remaining 1 cup mozzarella. Bake 25 to 30 minutes until bubbly and golden. Rest 5 minutes.
  5. Lift rolls onto plates, spoon over extra sauce, and tear fresh basil on top.

Notes

Let the baked dish rest for a full 5 minutes, the rolls cut and lift cleanly after that short pause. If your marinara is chunky, the sauce clings to the rolls even better.
