Creamy Smoked Salmon Pasta Recipe

Ingredients
  

  • 12 oz dried linguine or fettuccine
  • 4 tbsp unsalted butter
  • 1 lemon
  • 8 oz cold-smoked salmon
  • 1/4 cup finely chopped fresh dill
  • 1/4 tsp red pepper flakes
  • Kosher salt and freshly ground black pepper

Method
 

  1. Cook pasta in salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  2. Melt butter in a skillet over medium-low heat, add lemon zest and red pepper flakes, and cook 1 minute.
  3. Add drained pasta and 1/2 cup pasta water, toss, then fold in smoked salmon and warm 30 seconds.
  4. Remove from heat, add lemon juice and dill, season, and serve with extra dill and pepper.

Notes

Use cold-smoked salmon for the silkiest texture. If your smoked salmon is very salty, taste the finished dish before adding extra salt. The pasta water is key to a smooth, clingy sauce, so do not skip reserving it.
