Creamy Smoked Potato Salad Recipe

Ingredients
  

  • 2 lb Yukon Gold or red potatoes, scrubbed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or full-fat Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/2 cup finely diced celery
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped fresh dill
  • 1/2 tsp smoked paprika
  • 3/4 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper

Method
 

  1. Heat smoker to 225°F (107°C). Place whole unpeeled potatoes on grates and smoke 1 hour to 1 hour 15 minutes, until a knife slides through easily.
  2. Whisk mayonnaise, sour cream, mustard, vinegar, celery, red onion, dill, smoked paprika, salt, and pepper in a large bowl.
  3. Let potatoes rest 10 minutes, then cut into 1-inch chunks.
  4. Fold warm potato chunks into the dressing until evenly coated, then set aside for 15 minutes.
  5. Transfer to a serving bowl, top with extra dill and a pinch of smoked paprika, and serve.

Notes

If the potatoes give off extra liquid after smoking, pat them lightly with paper towels before cutting; this keeps the dressing from thinning. The salad can be served warm, room temperature, or chilled.
