Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 oz pancetta, diced
  • 1 lb spaghetti
  • 2 large eggs plus 2 egg yolks
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 3 cloves garlic, minced
  • 1/2 teaspoon freshly ground black pepper
  • Salt
  • 1 tablespoon olive oil

Method

  1. Cook spaghetti in salted boiling water until al dente, reserving 1 cup pasta water before draining.
  2. Pat shrimp dry, season with salt and pepper, and sear in olive oil over medium-high heat for about 2 minutes per side; transfer to a plate.
  3. Whisk together eggs, yolks, cream, Parmesan, and black pepper in a bowl until smooth.
  4. In the same skillet, cook pancetta until crisp, add garlic and cook 30 seconds, then remove from heat. Add hot pasta and egg mixture, tossing vigorously and adding pasta water as needed until creamy. Fold in shrimp and serve immediately with extra Parmesan and pepper.

Notes

Bring the eggs to room temperature before starting; it helps the sauce come together without shock. If you don’t have pancetta, thick‑cut bacon gives a similar salty bite, though the flavor will be a little smokier.
