Method
- Season chicken with salt and pepper, then sear in oil over medium high heat for 3 to 4 minutes per side until golden. Set aside.
- Lower heat to medium, add onion and a pinch of salt, and cook 5 minutes until soft. Stir in garlic for 30 seconds.
- Pour in broth, scrape up browned bits, and return chicken to the skillet. Cover and simmer 15 to 20 minutes until the chicken reaches 165°F.
- Transfer chicken to a board and shred with two forks. Return to the pan, add cream cheese, mustard, and thyme. Stir over low heat 2 to 3 minutes until creamy.
- Lightly toast the buns, pile on the saucy chicken, and serve immediately.
Notes
If the sauce thickens more than you like, stir in a tablespoon of warm broth or milk until it loosens. This filling also works beautifully spooned over biscuits or rice.
