Ingredients
  

  • 4 large eggs
  • 1/4 cup cottage cheese, full-fat or 2%
  • 1 tbsp butter
  • Pinch of salt
  • Pinch of black pepper

Method
 

  1. In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until just combined but a few small lumps of cottage cheese remain.
  2. Melt the butter in a nonstick skillet over medium heat. Once foaming, pour in the egg mixture and let it set for 10 seconds. Using a silicone spatula, push curds from the edges toward the center, tilting the pan so uncooked egg flows to the sides. Cook, folding gently, until the eggs are just set but still glossy, about 2 to 3 minutes.
  3. Spoon onto a warm plate immediately. Carryover cooking will finish the eggs. Top with extra pepper or fresh chives if you like.

Notes

The eggs will continue to cook from the heat of the pan and the plate, so pull them off the stove while they still look a little wet. If you’d like to prep ahead, you can whisk the egg mixture the night before and keep it covered in the fridge; just give it a quick stir before pouring into the pan.
