- Heat the olive oil in a large pot over medium-high. Brown the sausage, breaking it up, until crisp edges form, about 5 minutes. Transfer to a plate.
- Sauté the onion in the same pot until softened, 3 to 4 minutes. Add garlic and cook 30 seconds.
- Pour in broth, tomatoes, and Italian seasoning. Bring to a boil, then stir in pasta and sausage. Simmer until pasta is tender, 8 to 10 minutes.
- Reduce heat to low. Stir in cream and spinach until spinach wilts, 1 to 2 minutes. Season with salt and pepper. Ladle into bowls and top with Parmesan.
Notes
If you plan to store leftovers, cook the pasta about 1 minute less than al dente so it doesn't get mushy. The soup will thicken as it sits; add a splash of broth when reheating.
