Creamy Sausage Pasta Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb mild Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried Italian seasoning
  • 8 oz small pasta
  • 1/2 cup heavy cream
  • 2 cups packed fresh baby spinach
  • Salt and freshly ground black pepper
  • Grated Parmesan, for serving

Method
 

  1. Heat the olive oil in a large pot over medium-high. Brown the sausage, breaking it up, until crisp edges form, about 5 minutes. Transfer to a plate.
  2. Sauté the onion in the same pot until softened, 3 to 4 minutes. Add garlic and cook 30 seconds.
  3. Pour in broth, tomatoes, and Italian seasoning. Bring to a boil, then stir in pasta and sausage. Simmer until pasta is tender, 8 to 10 minutes.
  4. Reduce heat to low. Stir in cream and spinach until spinach wilts, 1 to 2 minutes. Season with salt and pepper. Ladle into bowls and top with Parmesan.

Notes

If you plan to store leftovers, cook the pasta about 1 minute less than al dente so it doesn't get mushy. The soup will thicken as it sits; add a splash of broth when reheating.
