- Pat salmon dry and season with salt and pepper. Sear in hot oil 3 to 4 minutes per side until golden and cooked to 145°F. Transfer to a plate.
- Lower heat to medium, add garlic and cook 30 seconds. Add spinach in handfuls and stir until wilted, about 2 minutes. Season with a pinch of salt.
- Pour in cream and Parmesan, stir, and simmer 2 to 3 minutes until slightly thickened. Taste and adjust seasoning.
- Return salmon to skillet, spoon sauce over fillets, and warm through 1 minute. Serve with lemon wedges.
Notes
If your spinach releases a lot of water, let it cook off for an extra minute before adding the cream. The sauce thickens quickly off the heat, so pull it from the stove as soon as it coats the spoon.
