Creamy Rotini Pasta Salad with Homemade Italian Dressing Recipe

Ingredients
  

  • 1 lb rotini pasta
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt, plus more for pasta water
  • 1/2 tsp black pepper
  • 1 pint cherry tomatoes, halved
  • 1 medium cucumber, seeded and diced
  • 1 bell pepper, diced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup pitted black olives, halved
  • 4 oz salami, diced small
  • 1/2 cup mozzarella pearls
  • 1/4 cup chopped fresh parsley

Method
 

  1. Whisk the mayonnaise, Greek yogurt, red wine vinegar, olive oil, garlic, Italian seasoning, salt, and pepper until smooth. Set aside.
  2. Boil the rotini in heavily salted water until al dente, about 8 minutes. Drain and rinse under cold water until cool. Shake off all excess water.
  3. In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, onion, olives, salami, mozzarella, and parsley. Pour the dressing over and toss well. Serve right away or chill briefly.

Notes

This salad can sit in the fridge for a few hours before serving with no issues. If it has been chilled overnight, let it sit at room temperature for 15 minutes and toss again with a tiny drizzle of olive oil to loosen the dressing.
