- Melt butter in a large skillet over medium heat. Sauté onion for 4 minutes until soft, then add garlic for 30 seconds.
- Stir in undrained Rotel, chicken broth, chili powder, cumin, salt, and pepper. Bring to a simmer.
- Break spaghetti in half and add to the skillet. Cook for 10-12 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
- Reduce heat to low. Stir in cream cheese until melted, then fold in chicken and cheddar. Heat through for 2-3 minutes.
- Spoon into bowls, top with cilantro or sour cream, and serve immediately.
Notes
Use rotisserie chicken for the quickest prep. If your sauce gets too thick, stir in a little more broth to reach the consistency you like. This dish is best right away but saves well for lunches.
