Creamy Red Potato Soup Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 4 cups low-sodium vegetable or chicken broth
  • 2 lbs red potatoes, unpeeled, diced into 1-inch pieces
  • 1 tsp fine sea salt
  • ½ tsp black pepper
  • ½ cup whole milk
  • Optional for serving: shredded sharp cheddar, sliced chives, crumbled bacon

Method
 

  1. Melt butter in a large pot over medium heat. Add onion and cook 5 minutes until translucent, then add garlic and cook 1 minute. Stir in flour and cook 2 minutes.
  2. Pour in broth while whisking, then add potatoes, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer 15-18 minutes until potatoes are fork-tender.
  3. Remove from heat and blend with an immersion blender until smooth. Stir in milk and warm over low heat for 2 minutes. Adjust seasoning.
  4. Ladle into bowls and top with cheddar, chives, and bacon if using. Serve hot.

Notes

The soup thickens as it sits, so if you’re making it ahead, plan on thinning it with a little broth when you reheat. Red potato skins blend in seamlessly, so leave them on for less prep and a subtle pink hue.
