Creamy Pasta Salad Recipe

Ingredients
  

  • 8 oz short pasta (rotini, elbows, or shells)
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • 1 cup frozen peas, thawed
  • ½ cup finely diced celery
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh dill

Method
 

  1. Cook pasta in salted water until just shy of al dente, drain, rinse, and spread on a sheet to cool until warm to the touch.
  2. Whisk the mayo, sour cream, mustard, vinegar, salt, and pepper into a smooth dressing.
  3. Stir the warm pasta into the dressing until coated, then cool to room temperature.
  4. Fold in the peas, celery, red onion, and dill. Serve right away or chill and stir again before spooning into bowls.

Notes

The salad is even better after a few hours in the fridge, so make it ahead if you can. If it tightens up overnight, loosen it with a splash of milk or a little more sour cream and give it a good stir.
